Child-friendly Chicken Tikka Salad

As the weather warms up, outdoor cooking comes into its own and this gently spiced, quick fix chicken tikka is a crowd pleaser for big and little kids alike.

Tikka simply refers to a grilled chunk of meat or vegetable and the charcoal-fired tabdoor oven is usually deployed to cook these. Saying that, an outdoor grill or charcoal barbecue does the job just fine for home cooking.

 

Ingredients (feeds 4)

  • 6 wooden or metal skewers
  • 6 garlic cloves
  • 1 inch ginger
  • Sprinkle fresh nutmeg
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 tbsp meat tenderiser powder (optional)
  • 4 tbsp natural Greek Yoghurt
  • Salt to taste
  • 500gm chicken breast chunks
  • 2 tbsp oil

Method

If using the wooden skewer, submerge them in water and leave them to soak. Finely mince the garlic and ginger into a large mixing bowl. Add in the nutmeg, turmeric, paprika, garam masala, meat tenderiser and yoghurt and mix thoroughly. Taste for salt and add more only if you need it.

Now, tip in the chicken and coat evenly with the marinade. Leave this to sit for an hour to two. When you’re ready to cook, thread the chicken onto the skewers evenly, brush with the oil and cook, turning from time to time for about 15 minutes. You can use a hot grill indoor or the barbecue outdoors.
